Baked Salmon with Roasted Carrots and Sautéed Spinach
This is a super quick meal prep option.
Ingredients
  • 2.5 lbs Salmon
  • 32 oz Whole carrots
  • 24 oz Spinach
  • Mrs. Dash
  • 3 tbsp Minced garlic
  • Smoked paprika
  • Extra virgin olive oil
  • Salt and pepper
Instructions
Heat oven to 425 ºF. Line a baking sheet with foil and grease lightly with olive oil.Pat salmon dry with a paper towel and cut into 3-finger width fillets. Rub fillets with olive oil. Season with Mrs. Dash, smoked paprika, and salt and pepper to taste.Place salmon skin side down on the baking sheet. Bake for 10-15 minutes depending on the thickness of your fillets.While your salmon bakes, peel your the carrots. Cut length-wise, then into 4 inch pieces. Toss in olive oil and season with salt and pepper. Spread in a single layer on a foil lined baking sheet.Bake the carrots for 15 minutes. Do not over cook. They will cook a little when you reheat throughout the week.Rinse spinach. Heal 2 tbsp olive oil in a large skillets. Add garlic and saute until fragrant. About 1 minute. Add red pepper flakes and saute an additional minute. Add all the spinach a few handfuls at a time. Toss with tongs as it wilts. Season with salt and pepper.To each storage container add 1 fillet, 1/2 cup spinach, and a handful of carrots. Allow your meals to cool completely before covering and refrigerating.
